Zusammenfassung

Als im 19. Jahrhundert die Importe von Öl und Ölfrüchten aus Afrika und Asien zunahmen, waren bisher in Europa fast immer knappe Fette plötzlich im Überfluss vorhanden. Beim Handel mit ihnen wurden bereits existierende Strukturen aus der Sklaverei übernommen, einschließlich kolonialer und rassistischer Ideologien. Wie durchdrangen die Rassevorstellungen, die der Pflanzenfett-Industrie zugrunde lagen, den französischen und deutschen Alltag? Der Band untersucht die Ernährungssysteme beider Länder und verbindet Ansätze aus Wirtschafts-, Kultur- und Kunstgeschichte. Er bietet nuancierte Antworten, indem sichtbare Spuren wie z. B. Werbeanzeigen ebenso in den Blick genommen werden wie Strategien des Verschweigens.
