note = {Although food consumption among urban people in Ottoman history
remains an under researched area, there is a growing body of
literature on the food consumption of those living in the palace and
among the elite. This asymmetry is in parallel with the lack of
historical documents. This means that while there is a wide range of
historical sources corresponding with the studies concerning the
elite’s food consumption, there is a lack of archival documents that
can shed light on urban people. Within this framework, this study
suggests using the probate inventories of grocers, who were scattered
around the neighbourhoods and kept a wide range of products in their
shops.},
